Sunday Sizzler – Eggs with Eleanor

This weeks instalment of Sunday Sizzler has an easy eggs recipe with a side of an eggcellent eleanor… you may have already guessed which book I am talking about… (ignore my egg puns)

RECIPE FOR EGGY BREAD

Serves 1

Ingredients:
2 pieces of bread (whatever you like but I use wholemeal)
2 eggs
Ham or bacon
Mushrooms

Method:
Heat a pan with a little oil or fry light, whisk the eggs together with salt and pepper and pour onto a plate, dip the bread in the eggs either side and fry on both sides until done. Fry up the mushrooms and bacon (if you’re using bacon) and hey presto! Easy eggs bread.

Eleanor Oliphant is Completely Fine has to be one of the best books myself and Dee have read this year. We normally share very different book tastes but this one just blew us away. I wrote a 5* review of this book earlier in the year you can read it here. If you haven’t had the change to read this book yet I highly recommend it.
