Sunday Sizzler – Simple Dish For One

Welcome to Brunching Bookworms Sunday Sizzler! Hope you enjoyed last weeks recipe, this week we have a wonderful tray bake for one you to cook up and a brilliant 5* must read about a grumpy old man who starts to show his sweet side.

5 Potatoes
Pack of pulled pork
Pack of baby corn
Mushrooms (as many as you like)
Baby cherry or plum tomatoes (as many as you like)
Cheese (any you like)
Cut the potatoes into wedges and put on to boil for between 6-8 minutes, and drain, shake them to fluff them up a little.
Chop up the baby corn, mushrooms and halve the tomatoes
Preheat a roasting dish in the oven at 180 and pour all the ingredients (apart from the cheese) in and stir around, drizzle with olive oil and any herbs and spices you like and stir again. Bake for 15 minutes, add grated cheese on top (as much as you want) and bake for a further 10 minutes, serve as it comes or with some salad if you would prefer.
Delicious and comforting on a cold night.

To accompany your tray bake I have chosen A Man Called Ove by Fredrik Backman as this weeks must read. This is one of my favourite novels of all time, a heartwarming, tender story about love, loss, friendship, loneliness and second chances. Ove is a very grumpy old man and set in his way, when new people move into the street he doesn’t like their attitude… he just doesn’t like them at all, he doesn’t even like the cat that keeps following him around. After much persistence and persuasion Ove beings to make new friends… even if its begrudgingly. A beautifully written, funny and uplifting story.
